Kale is a nutrient rich vegetable that is chock full of vitamin A, vitamin C, antioxidants, carotenoids and flavonoids. But, Kale also has a not so healthy secret, it contains Oxalic acid. Oxalic acid is a mycotoxin and oxalic crystals can bind with calcium in your body to cause muscle pain, kidney stones, gout and thyroid problems. To decrease the affects of the oxalic acid there are some great tips below to make your Kale more nutritious and healthy:
1. Choose Dinosaur Kale over Curly Kale (Dino Kale is lower in Oxalates)
2. Steam your kale to reduce its oxalate levels by 2/3's
3. Add high quality fat to optimize the absorption of vitamins in kale. Grass-fed butter or coconut oil are good choices
Enjoy your Kale and eat a variety of fruits and vegetables to optimize a healthy diet.
