This muffin recipe is so delicious and so healthy. It was made with freshly picked wild raspberries but you can substitute your favorite berry – blueberry, blackberry etc… It is easy and quick to make – but once out of the oven they do not last very long!

Wild Raspberry Gluten Free Healthy Muffins – Paleo Approved
Muffin Ingredients
- 4 eggs
- ½ cup of unsweetened applesauce (or 1 banana)
- ⅓ cup coconut oil
- ¼ cup pure raw honey or pure maple syrup
- 1 tablespoon vanilla extract
- ½ cup coconut flour
- ½ tsp cinnamon
- 1 teaspoon baking soda
- ¼ teaspoon sea salt
- 1 cup of wild raspberries or other fresh berries
Glaze Ingredients
- 2 tablespoons maple syrup or honey
- 2 tablespoons butter (or coconut oil)
- 2 tablespoons coconut cream (manna), coconut milk or almond milk
- ½ teaspoon vanilla extract
- ¼ teaspoon cinnamon
- pinch of sea salt
Instructions
- Preheat oven to 350 degrees.
- In a mixing bowl, combine eggs, banana, oil, honey and vanilla and mix until combined
- Add in coconut flour, baking soda, cinnamon and sea salt and stir.
- Fold in berries gently.
- Fill a lined muffin tray about ¾ of the way to the top.
- Bake for 20 minutes , golden on the top and cooked through
- Mix together the Glaze ingredients and when muffins are cool, drizzle the glaze
over each muffin then top each with a whole berry and enjoy!
