Healthy Alternatives: Keep your waistline from expanding this holiday season with these healthy alternatives to some of your favorite dishes!

Instead of mashed potatoes try making George Stella’s garlic mashed cauliflower. It’s a tasty alternative and also a way to add some more vegetables into your diet. These only take 15 minutes to make so they are a fast and tasty dish!

Recipe:

You will need 1 medium cauliflower head, 1 tablespoon of softened cream cheese, ¼ cup of grated parmesan, ½ teaspoon of minced garlic, ½ teaspoon of salt, 1/8 teaspoon ground black pepper, 3 tablespoons unsalted butter and ½ teaspoon of chopped or drive chives, for garnish.

Boil a pot of water over high heat. Directions

  1. Set a stockpot of water to boil over high heat.
  2. Clean and cut cauliflower into small pieces. Cook in boiling water for about 6 minutes, or until well done. Drain well; do not let cool and pat cooked cauliflower very dry between several layers of paper towels.
  3. In a bowl with an immersion blender, or in a food processor, puree the hot cauliflower with the cream cheese, Parmesan, garlic, chicken base, and pepper until almost smooth.

Roasted Honey Mustard Brussel’s Sprouts
You will need 1.5 pounds of Brussel Sprouts. 1 tablespoon of olive oil, 2 tablespoons of whole grain mustard, 2 tablespoon of honeys and salt and pepper to taste.

Directions

  1. Preheat the oven to 425 degrees. Place a baking sheet in the oven as it preheats.
  2. Cut the sprouts in half and toss with olive oil, salt, and pepper.
  3. Carefully remove pan from hot oven. Spray with cooking spray and place sprouts cut side down on the baking sheet.
  4. Roast for 30 minutes, shaking the tray halfway through cooking time.
  5. Stir together honey and mustard. Remove sprouts and toss in honey mustard while still hot. Season with additional salt and pepper if needed.
