
Healthy & Delicious Cauliflower Crust Pizza - Gluten-free
I love pizza, but being gluten-free it's tough to get a healthy and gluten-free version of the most delicious wheat crust version!
But, I finally found the solution - it s a delicious (really it is!) pizza crust made out of cauliflower. Give it a try and please let us know
how you like it.
Simply Delicious Cauliflower Pizza Crust - Gluten Free
4 cups cauliflower rice (made from raw cauliflower florets - see directions below)
1/3 cup goat cheese (softened)
1 egg
1 tsp dried oregano
Pinch of sea salt
Directions:
1. Preheat oven to 400F
2. Pulse raw cauliflower florets in a food processor until they resemble rice size pellets
3. Bring a couple of inches of water to a boil in a pot and then place the cauliflower pellets in the water, cover and cook for 5 minutes.
4. Drain the pellets in a strainer.
5. Place the pellets onto a cotton cloth (clean dishcloth is fine) and squeeze out all the excess water. Be sure to get the pellets nice and dry.
6. Add the pellets into a mixing bowl along with the beaten egg, oregano, goat cheese and salt. Mix very well.
7. Line a baking sheet with parchment paper (very important) and then press the cauliflower pizza dough onto the sheet 1/3" thick.
8. Bake at 400F for 35-40 minutes until nicely golden in color.
9. Add your toppings, sauce, cheese, mushrooms..whatever you love on pizza.
10 Pop in the oven again for 5-10 minutes until the cheese is melted.
